"Grandpa Stu's Chocolate Mousse"

       Last Friday we had guests, so Mom asked if I would make dessert. I said, "Sure, I'll make 'Grandpa Stu's Chocolate Mousse.'"  It was delicious , the only problem was that the chocolate did not completely mix in. The reason that this happened was that there was too much time in-between melting the chocolate and mixing it in. The solution is to melt the chocolate closer to mixing it in.

P.S. Here is "Grandpa Stu's Chocolate Mousse Recipe" .
1/2 pound semisweet chocolate
6 large eggs,separated
3 tbs. water
1/4 cup Frangelico liqueur
2 cups heavy whipping cream
6 tbs. sugar
whipped cream for garnish
grated chocolate for garnish

(1) Cut the chocolate into half inch pieces and place the chocolate into a saucepan and put the saucepan into almost boiling water (I use the microwave). Melt over low heat. (2)   Put the yolks and water into a heavy saucepan place the saucepan over low heat and beat vigorously and constantly, when the sauce begins to thicken, add the liqueur, beating constantly. Cook until the sauce achieves a consistency of a sabayon or hollandaise, which it is.  (3)  Add the melted chocolate to the yolks and liqueur sauce and fold it in. Scrape the sauce into a mixing bowl.  (4)  Beat the cream until stiff, adding two tbs. of the sugar towards the end of beating. Fold this into the chocolate mixture.  (5)  Beat the whites until soft peaks begin to form . Beat in remaining sugar and continue beating until stiff. Fold this into the mousse.  (6)  Spoon the mousse into a crystal bowl and chill until ready to serve. Garnish with whipped cream and grated chocolate.

Yield: Twelve or more servings

  1. Hey Noah,
    I made some Mousse today. Actually I made it three times. The first time I did not let the sabayon thicken enough and it did not hold together with the chocolate mixture. It all separated in the refridgerator. The second time was perfect but it was not enough to fill the bowl for the party tonight so I had to do it again. The third time was not as good as the second time but it is ok. I did have a lot of tastey bowls to clean-up afterward.
